About the Recipe

This is my current go-to vegan and gluten-free cookie recipe.

These vegan chocolate chip cookies are the best healthy chocolate chip cookie recipe ever , so easy to make, and the result is a fluffy and flavorful treat that you will love.

Ingredients

  • 1 flaxseed egg (1 tbsp ground flaxseed mixed with 2.5 tbsp water)

  • 1/4 cup coconut sugar (or erythritol)

  • 2 tbsp coconut oil, melted

  • 1/2 tsp baking soda

  • 1/4 tsp of salt

  • 2 tsp pure vanilla extract

  • 2 cups almond flour or LG oatmeal

  • 1/2 cup dairy-free chocolate chips

Preparation

  • Preheat the oven to 350 degrees. 

  • Cover a baking sheet with parchment paper.

  • Make the flax egg and let it rest for a few minutes.

  • Mix the sugar and oil with a wooden spoon.

  • Add the baking soda, salt, vanilla, and flax egg. Mix well.

  • Add the flour and mix.

  • Add the chocolate chips.

  • Shape 12 balls. Place them on a tray and lightly squish with your hand.

  • Bake 10-12 min. Let cool 10 min before moving and eating.
