This is my current go-to vegan and gluten-free cookie recipe.
These vegan chocolate chip cookies are the best healthy chocolate chip cookie recipe ever , so easy to make, and the result is a fluffy and flavorful treat that you will love.
Ingredients
1 flaxseed egg (1 tbsp ground flaxseed mixed with 2.5 tbsp water)
1/4 cup coconut sugar (or erythritol)
2 tbsp coconut oil, melted
1/2 tsp baking soda
1/4 tsp of salt
2 tsp pure vanilla extract
2 cups almond flour or LG oatmeal
1/2 cup dairy-free chocolate chips
Preparation
Preheat the oven to 350 degrees.
Cover a baking sheet with parchment paper.
Make the flax egg and let it rest for a few minutes.
Mix the sugar and oil with a wooden spoon.
Add the baking soda, salt, vanilla, and flax egg. Mix well.
Add the flour and mix.
Add the chocolate chips.
Shape 12 balls. Place them on a tray and lightly squish with your hand.
Bake 10-12 min. Let cool 10 min before moving and eating.
