This lentil bolognese recipe it's a flavorful and hearty sauce, perfect for adding flavor and nutrition to zucchini noodles or spaghetti squash.

Lentils are an excellent ground meat replacement because they have a rich earthy taste, keep their texture, and are rich in minerals and healthy plant protein.

Let's see how to make it!

Ingredientes

  • 2 tbsp olive oil

  • 1/2 onion finely diced

  • 1 large carrot peeled and chopped

  • 4 cloves garlic minced

  • 3 ounce can tomato paste

  • 8 ounce can tomato sauce

  • 4 diced tomatoes

  • 1 tbsp dried sweet basil

  • 1/2 tsp dried oregano

  • 1/8 tsp baking soda

  • Salt & pepper to taste

  • 1 cup lentils soaked overnight, rinsed, and picked over

  • 1 cup water

Preparación

  • Heat olive oil in a large skillet.

  •  Add onion, and carrot.

  •  Cook, stirring as needed, until softened, about 5-10 minutes.

  •  Add garlic, and cook, stirring frequently, for 30 seconds.

  •  Stir in tomato paste, and cook, stirring it in, for 1 minutes.

  •  Add tomato sauce, diced tomatoes with juice, basil, oregano, baking soda, and salt and pepper to taste.

  •  Stir in lentils and water.

  •  Simmer, stirring regularly, until lentils have softened, about 20-30 minutes.

#TipsByIvette : make sure to eat it with zoodles, kelp noodles, butternut squash spirals or any other veggie pasta because lentils are already high in carbs. Remember everything is about BALANCE.
